The project´s main challenge, since the beginning, was to transform an old shed into a restaurant and coffee shop the middle of a block, in Pinheiros, São Paulo. The shed, originally a foundry factory, later a car garage, gave us the chance to work with a lot of original elements, inherited from its previous occupations.

Located at the southernmost point of the Norwegian coastline, where the sea storms from the north and south meet, the project is situated at a unique confluence. Marine species flourish here in both briny and brackish waters to produce a natural abundance in biodiversity at the site. The Snøhetta-designed restaurant also functions as a research center for marine life, providing a tribute to the wild fauna of the sea and to the rocky coastline of Norway’s southern tip.

The importance of the simplicity of ingredients, as well as the context where they come from, are the sources of inspiration for Mó-Bistró. This ideology reminds us constantly about the origin of the ingredients that are combined in each dish. It also strives to coexist with an architecture that becomes an extension of that gastronomic experience. This, in turn, helps us recall the importance of living in the “Peruvian Desert and Coast”. The architecture seeks to invoke qualities found in an ecosystem like the Desert, which is made up mainly of Extremes.

Hono Izakaya / Charléne Bourgeois

Located on St. Joseph Street in Quebec City, Honō Izakaya continues the tradition of Japanese taverns, a place where food and alcoholic beverages are a pretext for having a good time with family and friends. Although the locale underwent major renovations, the transformation integrates and highlights several elements of the original historic building. Since the restaurant occupies two levels, customers are struck, on entering, by the high ceilings. A few steps inside guide you towards the bar and kitchen, creating a threshold to a more intimate space. Giving depth to the locale are the two alcoves arranged behind the bar, permitting a view into the kitchen and favoring exchanges with the kitchen staff.
